Instructions
- Preheat the oven to 375°F (190°C) and line a jelly roll pan with parchment paper.
- In a large bowl, beat eggs until frothy, then gradually add sugar and beat until thickened and pale.
- Gently fold in sifted flour and baking powder until just combined.
- Spread the batter evenly in the prepared pan and bake for 12-15 minutes until slightly golden.
- Immediately turn the cake onto a powdered sugar-dusted kitchen towel, peel off the parchment, and roll it up while warm.
