  • 3/4 cup granulated sugar
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup mixed fresh berries (strawberries and blueberries)
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Line a jelly roll pan with parchment paper.
  2. In a mixing bowl, whisk eggs and sugar until thick and pale (about 5 minutes).
  3. In another bowl, sift together flour, baking powder, and salt. Gently fold into the egg mixture until just combined.
  4. Pour batter into prepared pan, spreading evenly. Bake for 15-20 minutes until golden brown.
  5. Cool in the pan for 5 minutes, then turn onto a powdered sugar-dusted towel and roll up tightly while warm. Let cool completely in this shape.
  6. Whip heavy cream until soft peaks form; fold in crushed berries for filling.
  7. Unroll cooled cake, spread the filling evenly, then roll back up without the towel. Refrigerate for at least an hour before slicing.
