Instructions

- In another bowl, sift together flour, baking powder, and salt. Gently fold into the egg mixture until just combined.
- Pour batter into prepared pan, spreading evenly. Bake for 15-20 minutes until golden brown.
- Cool in the pan for 5 minutes, then turn onto a powdered sugar-dusted towel and roll up tightly while warm. Let cool completely in this shape.
- Whip heavy cream until soft peaks form; fold in crushed berries for filling.
- Unroll cooled cake, spread the filling evenly, then roll back up without the towel. Refrigerate for at least an hour before slicing.
