  • 1 cup broccoli florets
  • 1 cup carrots, thinly sliced
  • 1 cup zucchini, sliced into half-moons
  • 1 cup snow peas
  • 2 tbsp low-sodium soy sauce
  • 2 tsp olive oil
  • 1 tbsp fresh ginger, minced
  • 2 cloves garlic, minced
  • 1 tbsp sesame seeds (for garnish)

Instructions

  1. Wash and chop all vegetables into bite-sized pieces.
  2. In a large skillet over medium heat, add olive oil. Once shimmering, add minced garlic and ginger; sauté for about 30 seconds.
  3. Add broccoli to the pan and stir-fry for 1-2 minutes until bright green.
  4. Toss in carrots and bell peppers; stir continuously until they soften slightly.
  5. Add zucchini and snow peas; cook until tender-crisp (about 3-4 minutes).
  6. Drizzle low-sodium soy sauce over the veggies while stirring for another minute.
  7. Remove from heat and garnish with sesame seeds before serving hot over rice or noodles.
