  • 4 cups butternut squash, peeled and cubed
  • 1 cup low-fat cottage cheese
  • 1 medium yellow onion, chopped
  • 3 cloves fresh garlic, minced
  • 4 cups low-sodium vegetable broth
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • ½ tsp ground nutmeg
  • Salt and pepper to taste

Instructions

  1. Peel and cube the butternut squash for even cooking. Chop onion and mince garlic.
  2. In a large pot, heat olive oil over medium heat. Sauté onion and garlic until golden brown (about 5 minutes).
  3. Add butternut squash, cumin, and nutmeg; sauté for another 5 minutes.
  4. Pour in vegetable broth until vegetables are submerged. Bring to a boil, then reduce heat and simmer for 20-25 minutes until squash is fork-tender.
  5. Blend until smooth using an immersion blender or regular blender.
  6. Stir in cottage cheese until combined; season with salt and pepper.
