- 1 lb ground lamb or beef
- 1 medium onion, diced
- 2 medium carrots, diced
- 1 cup frozen peas
- 2 cloves garlic, minced
- 1 cup beef broth
- 2 lbs russet potatoes, peeled and chopped
- 4 tbsp butter
- ¼ cup heavy cream
- 1 tsp fresh thyme (or ½ tsp dried)
- 1 tsp fresh rosemary (or ½ tsp dried)
- Salt and pepper to taste
Instructions
- Prepare the Potatoes: Boil peeled and chopped potatoes in salted water until fork-tender (about 15-20 minutes).
- Mash with Love: Drain potatoes, return them to the pot, add butter and cream, then mash until smooth. Season with salt and pepper.
- Sauté the Veggies: In a skillet over medium heat, sauté onions, carrots, and garlic for about 5-7 minutes until softened.
