  • 1 ½ cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ cup sugar (brown or coconut)
  • 2 large eggs (room temperature)
  • ½ cup milk (dairy or non-dairy)
  • ¼ cup melted butter or vegetable oil
  • Pinch of salt

Instructions

  1. Preheat your oven to 400°F (200°C). Pierce sweet potatoes with a fork and roast for 45 minutes until tender.
  2. In a bowl, mix mashed sweet potatoes with sugar, melted butter or oil, eggs, and milk until smooth.
  3. In another bowl, whisk together flour, baking powder, cinnamon, and salt. Fold this mixture into the wet ingredients until just combined.
  4. Fill greased muffin tins three-quarters full and bake for 20-25 minutes until golden brown. A toothpick should come out clean.
  5. Allow muffins to cool in the pan for five minutes before transferring to a wire rack.
