  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 3 cloves fresh garlic, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 2 cups fresh spinach or kale
  • 1 can (14.5 oz) fire-roasted tomatoes
  • 6 cups chicken broth (homemade or store-bought)
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Chop the carrots and celery; mince the garlic.
  2. In a large pot over medium heat, add olive oil and sauté garlic until fragrant (about 30 seconds). Add carrots and celery; cook until slightly softened.
  3. Add chicken breasts and pour in enough broth to cover all ingredients. Bring to a gentle simmer.
  4. Stir in canned tomatoes and dried herbs. Let simmer for about 10 minutes.
  5. Add spinach or kale along with salt and pepper to taste. Cook until greens are wilted (3-5 minutes).
  6. Remove cooked chicken from the pot, shred with two forks, and return to the soup. Serve hot.
