- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 3 cloves fresh garlic, minced
- 2 medium carrots, diced
- 2 celery stalks, diced
- 2 cups fresh spinach or kale
- 1 can (14.5 oz) fire-roasted tomatoes
- 6 cups chicken broth (homemade or store-bought)
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 tsp dried thyme
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Chop the carrots and celery; mince the garlic.
- In a large pot over medium heat, add olive oil and sauté garlic until fragrant (about 30 seconds). Add carrots and celery; cook until slightly softened.
- Add chicken breasts and pour in enough broth to cover all ingredients. Bring to a gentle simmer.
- Stir in canned tomatoes and dried herbs. Let simmer for about 10 minutes.
- Add spinach or kale along with salt and pepper to taste. Cook until greens are wilted (3-5 minutes).
- Remove cooked chicken from the pot, shred with two forks, and return to the soup. Serve hot.
