- 8 oz penne pasta
- 5 oz Boursin cheese (garlic & herb)
- 1 cup heavy cream
- ½ cup freshly grated Parmesan cheese
- 2 cloves garlic (minced)
- 2 cups fresh spinach (or frozen)
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C) and grease a baking dish.
- Cook the penne pasta in boiling salted water until al dente, about 8-10 minutes. Drain.
- In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, then add spinach until wilted (about 3 minutes).
- In a bowl, mix cooked pasta with Boursin cheese, heavy cream, sautéed garlic and spinach, half of the Parmesan, salt, and pepper until well combined.
- Transfer to the greased baking dish and top with remaining Parmesan cheese.
- Bake for 25-30 minutes or until golden brown and bubbly. Let cool slightly before serving.
