Description

Ingredients

  • 8 oz penne pasta
  • 5 oz Boursin cheese (garlic & herb)
  • 1 cup heavy cream
  • ½ cup freshly grated Parmesan cheese
  • 2 cloves garlic (minced)
  • 2 cups fresh spinach (or frozen)
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish.
  2. Cook the penne pasta in boiling salted water until al dente, about 8-10 minutes. Drain.
  3. In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, then add spinach until wilted (about 3 minutes).
  4. In a bowl, mix cooked pasta with Boursin cheese, heavy cream, sautéed garlic and spinach, half of the Parmesan, salt, and pepper until well combined.
  5. Transfer to the greased baking dish and top with remaining Parmesan cheese.
  6. Bake for 25-30 minutes or until golden brown and bubbly. Let cool slightly before serving.
