  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 cup fresh parsley, chopped
  • 3 garlic cloves, minced
  • 1 tsp ground cumin
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp olive oil (plus extra for drizzling)
  • 4 pita breads
  • 1 cup Greek yogurt
  • ½ cucumber, finely diced
  • 2 tbsp lemon juice

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a food processor, combine chickpeas, parsley, garlic, cumin, salt, and pepper. Pulse until slightly chunky.
  3. Form mixture into small balls and place on a parchment-lined baking sheet. Drizzle with olive oil.
  4. Bake for about 25 minutes until golden brown and crispy.
  5. In a bowl, mix Greek yogurt with cucumber, lemon juice, garlic, salt, and pepper to create tzatziki sauce.
  6. Warm pita breads and fill each with baked falafels and tzatziki sauce.
