Ingredients

  • 4 medium russet or Yukon Gold potatoes
  • 4 tbsp extra virgin olive oil
  • 4 cloves fresh garlic, minced
  • 2 tbsp fresh rosemary or thyme, chopped
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1/2 cup grated Parmesan cheese (optional)
  • Juice of 1 lemon

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and dry the potatoes thoroughly. Slice them thinly across the top without cutting all the way through.
  3. In a bowl, mix olive oil, minced garlic, salt, pepper, and herbs. Drizzle this mixture generously over each potato layer.
  4. Place the potatoes on a parchment-lined baking sheet and bake for 40-50 minutes until golden brown and tender.
  5. About 5 minutes before they’re done, sprinkle Parmesan cheese on top (if using) and finish with a squeeze of fresh lemon juice.
