- 4 tbsp extra virgin olive oil
- 4 cloves fresh garlic, minced
- 2 tbsp fresh rosemary or thyme, chopped

- 1/2 cup grated Parmesan cheese (optional)
- Juice of 1 lemon
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and dry the potatoes thoroughly. Slice them thinly across the top without cutting all the way through.
- In a bowl, mix olive oil, minced garlic, salt, pepper, and herbs. Drizzle this mixture generously over each potato layer.
- Place the potatoes on a parchment-lined baking sheet and bake for 40-50 minutes until golden brown and tender.
- About 5 minutes before they’re done, sprinkle Parmesan cheese on top (if using) and finish with a squeeze of fresh lemon juice.
