  • 1 cup all-purpose flour
  • 1 cup cornmeal
  • 1 cup buttermilk

  • 1 teaspoon freshly cracked black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • Vegetable oil for frying

Instructions

  1. Wash and slice green tomatoes into 1/4-inch thick rounds. Pat them dry and sprinkle with salt; let sit for 10 minutes to draw out moisture.
  2. Set up your breading station: In one bowl, pour buttermilk; in another, mix flour, cornmeal, salt, pepper, and cayenne.
  3. Dip each tomato slice in buttermilk followed by the flour-cornmeal mixture, pressing lightly to ensure coating sticks.
  4. Heat about 1 inch of vegetable oil in a skillet over medium-high heat until shimmering (around 350°F).
