  • 3 large sweet potatoes (about 1.5 lbs), peeled and sliced into 1/8 inch rounds
  • 1 cup heavy cream
  • 1/2 cup dark brown sugar
  • 4 tbsp unsalted butter, melted
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Peel and slice sweet potatoes into even rounds.
  3. In a mixing bowl, combine heavy cream, brown sugar, melted butter, cinnamon, salt, and pepper; whisk until well blended.
  4. In a greased baking dish, layer half of the sweet potato slices in an overlapping pattern and pour half of the creamy mixture over them.
  5. Repeat with remaining sweet potatoes and cream mixture. Top with extra butter if desired.
  6. Cover with aluminum foil and bake for 45 minutes. Remove foil during the last 15 minutes to allow top to brown.
