  • 1 cup grated cheese (cheddar or mozzarella)
  • 2 large eggs

  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • Baking spray

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin with baking spray.
  2. In a large bowl, combine the cooked rice, eggs, cheese, vegetables, salt, pepper, and garlic powder. Mix well.
  3. Spoon the mixture into each muffin cup until they are about three-quarters full.
