  • 8 oz cheese tortellini
  • 4 cups romaine lettuce (chopped)
  • ½ cup Caesar dressing
  • ½ cup freshly grated Parmesan cheese
  • 1 cup cherry tomatoes (halved)
  • ¼ cup bacon bits (crispy)
  • 2 tbsp pine nuts (optional)

Instructions

  1. Cook the cheese tortellini in salted boiling water according to package instructions until they float (about 3-4 minutes). Drain and rinse under cold water.
  2. While the tortellini cooks, wash and chop the romaine lettuce and halve the cherry tomatoes.
  3. In a large bowl, combine the cooked tortellini, romaine lettuce, cherry tomatoes, bacon bits, and toasted pine nuts if using.
  4. Pour the Caesar dressing over the salad mixture and gently toss until all ingredients are well coated.
  5. Serve immediately or chill in the fridge for 30 minutes before serving for extra refreshment.
