  • 4 cloves fresh garlic, minced
  • 1/4 cup Dijon mustard
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 2 tbsp unsalted butter
  • Salt and pepper to taste
  • 2 lbs potatoes, peeled and chopped for mashed potatoes

Instructions

  1. Gather all ingredients. Mince the garlic and measure out the mustard and cream.
  2. In a large skillet over medium heat, melt butter. Season chicken breasts with salt and pepper; sear them until golden brown on both sides (about 6-7 minutes each). Remove chicken from the pan.
  3. In the same skillet, sauté minced garlic until fragrant (about 1 minute).
  4. Add heavy cream, chicken broth, and Dijon mustard; stir well and simmer until slightly thickened.
  5. Return the chicken to the skillet to soak in the sauce for an additional 5-10 minutes or until cooked through.
  6. Meanwhile, boil peeled potatoes until fork-tender. Mash with butter and a splash of milk until smooth.
