  • 1 cup brown or green lentils
  • 3 cups low-sodium vegetable broth
  • 1 medium sweet onion, chopped
  • 3 garlic cloves, minced
  • 1 cup bell peppers (mixed colors), chopped
  • 1 cup carrots, grated or finely chopped
  • 1 cup rolled oats
  • 2 tbsp tomato paste
  • 1 tbsp balsamic vinegar
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp black pepper
  • Fresh herbs (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a saucepan, combine lentils and vegetable broth; bring to a boil, then simmer for 20-25 minutes until tender.
  3. In a skillet, sauté onion, garlic, bell peppers, and carrots in olive oil for about 5-7 minutes until soft.
  4. In a large bowl, mix cooked lentils with sautéed veggies, oats, tomato paste, balsamic vinegar, and spices until well combined.
  5. Shape the mixture into a loaf in a lined baking pan or on parchment paper.
  6. Bake for 45-50 minutes or until golden brown. Let cool slightly before slicing.
