- 1 medium red onion, diced

- 1 red chili pepper, chopped (adjust for spice preference)
- 1/4 cup cider vinegar
- 3 tbsp brown sugar (adjust to taste)
- Salt and pepper to taste
Instructions
- Prepare ingredients by washing nectarines and chopping them into small cubes. Dice the red onion and mince garlic and ginger.
- In a medium saucepan over medium heat, add a splash of oil. Sauté the diced red onion until translucent (about 3-4 minutes). Add minced garlic and ginger for an additional minute.
- Stir in the chopped nectarines and red chili pepper. Cook for about 5 minutes until nectarines soften slightly.
- Add brown sugar, cider vinegar, salt, and pepper. Mix well to combine all ingredients.
- Reduce heat to low and simmer for 15-20 minutes until the chutney thickens.
- Let cool slightly before transferring to sterilized jars or containers. Store in the refrigerator for up to two weeks.
