This easy-to-make condiment enhances grilled chicken, pork, or even as a zesty dip for snacks. Perfect for cookouts or impressing dinner guests, this chutney is destined to become a staple at your table!

Ingredients

Scale
  • 2 ripe nectarines, chopped
  • 1 medium red onion, diced
  • 1 tbsp fresh ginger, peeled and grated
  • 2 garlic cloves, minced
  • 1 red chili pepper, chopped (adjust for spice preference)
  • 1/4 cup cider vinegar
  • 3 tbsp brown sugar (adjust to taste)
  • Salt and pepper to taste

Instructions

  1. Prepare ingredients by washing nectarines and chopping them into small cubes. Dice the red onion and mince garlic and ginger.
  2. In a medium saucepan over medium heat, add a splash of oil. Sauté the diced red onion until translucent (about 3-4 minutes). Add minced garlic and ginger for an additional minute.
  3. Stir in the chopped nectarines and red chili pepper. Cook for about 5 minutes until nectarines soften slightly.
  4. Add brown sugar, cider vinegar, salt, and pepper. Mix well to combine all ingredients.
  5. Reduce heat to low and simmer for 15-20 minutes until the chutney thickens.
  6. Let cool slightly before transferring to sterilized jars or containers. Store in the refrigerator for up to two weeks.
