- 4 large flour tortillas
- 2 cups shredded cheese (1 cup mozzarella, 1 cup cheddar)
- 1 cup bell peppers (mixed red, yellow, green), sliced
- 1 medium onion, sliced
- 1 cup canned black beans, rinsed
- ¼ cup fresh cilantro, chopped
- 2 tsp olive oil
- Sour cream (optional)
Instructions
- Heat olive oil in a skillet over medium heat. Add sliced bell peppers and onion; sauté for about 5 minutes until softened.
- Stir in the rinsed black beans and cook for another 3-4 minutes until heated through.
- On one tortilla, sprinkle half with cheese. Spoon on the veggie-bean mixture and top with more cheese.
- Fold the tortilla in half and place it in the skillet. Cook for about 3-4 minutes per side until golden brown.
- Remove from heat and let cool slightly before slicing into wedges.
