Ingredients

Scale
  • 1 cup long-grain rice
  • 2 large sweet onions (Vidalia or yellow), sliced
  • 4 tbsp unsalted butter
  • 2 cups beef broth (homemade or store-bought)
  • 1 cup shredded Gruyère cheese
  • 1 tsp fresh thyme leaves
  • Salt and pepper to taste
  • 1 bay leaf

Instructions

  1. In a large skillet over medium heat, melt the butter. Add sliced onions and sauté until golden brown and caramelized, about 15-20 minutes.
  2. Stir in the rice until well-coated with butter. Pour in the beef broth and add thyme, salt, and pepper.
  3. Bring to a boil, then reduce heat to low and cover tightly. Simmer for 18-20 minutes until the rice absorbs all the liquid.
  4. Remove from heat, fluff with a fork, and stir in the Gruyère cheese until melted. Serve warm, garnished with extra thyme if desired.
