  • 2 large eggs, at room temperature
  • 1/2 cup full-fat sour cream

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs and melted butter; press into lined muffin tins to form the crust.
  3. Bake for 5-7 minutes until golden; cool.
  4. In a mixing bowl, beat cream cheese and sugar until smooth. Add orange juice, zest, vanilla extract, and sour cream; mix well.
  5. Gently mix in eggs one at a time until just blended.
  6. Spoon filling into cooled crusts, filling almost to the top.
  7. Bake for 15-20 minutes until set but slightly jiggly in the center; cool completely before chilling in the fridge for at least 3 hours.
