  • 4 medium bell peppers (orange or green)
  • 1 lb lean ground beef or turkey
  • 1 cup cooked rice
  • 2 tbsp taco seasoning
  • 1 cup shredded cheddar or pepper jack cheese
  • Sour cream (optional, for serving)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. Slice the tops off the bell peppers and remove the seeds.
  3. In a skillet over medium heat, brown the ground beef or turkey until cooked. Stir in cooked rice and taco seasoning until well mixed.
  4. Stuff each pepper generously with the meat mixture and top with shredded cheese.
  5. Place stuffed peppers in the baking dish and bake for 25-30 minutes until tender and cheese is bubbly.
  6. Let cool slightly before serving; add sour cream on top if desired.
