  • 1 ½ cups crushed graham crackers
  • ½ cup unsalted butter, melted
  • 2 (3 oz) packages berry-flavored jello (strawberry or raspberry)
  • 2 cups boiling water
  • 8 oz cream cheese, softened
  • 8 oz whipped topping (like Cool Whip)
  • 2 cups fresh berries (strawberries, blueberries, raspberries)

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix crushed graham crackers with melted butter until crumbly. Press firmly into the bottom of a 9×13 inch baking dish for the crust.
  2. In a separate bowl, dissolve the jello in boiling water. Let cool slightly before pouring half over the crust. Refrigerate for about 30 minutes until set.
  3. While waiting, beat softened cream cheese and whipped topping until smooth. Once the first layer is set, spread this mixture evenly over it.
  4. Pour the remaining jello over the cream cheese layer and return to the fridge for another hour to set completely.
  5. Top with fresh berries before slicing into squares and serving.
