  • 1 (6 oz) fresh salmon fillet
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp sriracha sauce (adjust to taste)
  • 2 green onions, finely chopped
  • 1 tsp sesame oil
  • 3 tbsp vegetable oil (for frying)
  • 1 sheet nori, cut into strips (for garnish)

Instructions

  1. Rinse sushi rice under cold water until clear. Cook according to package instructions and let cool slightly.
  2. Shape cooled rice into small patties (2-3 inches in diameter).
  3. Heat vegetable oil in a non-stick skillet over medium heat. Fry each patty for about 3-4 minutes per side until golden brown.
  4. While frying, slice salmon into bite-sized pieces and toss with soy sauce and sriracha.
  5. In another pan, heat sesame oil over medium heat. Cook salmon pieces for 2-3 minutes until just cooked through.
  6. Assemble by placing crispy rice patties on plates, topping with salmon, and garnishing with green onions and nori strips.
