Ingredients

  • 4 salmon fillets (6 oz each)
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Zest of 1 lemon
  • Salt and pepper to taste
  • 1 cup plain Greek yogurt
  • Juice of 1 lemon
  • 2 tbsp olive oil
  • Fresh parsley or cilantro for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix cumin, coriander, paprika, garlic powder, lemon zest, salt, and pepper.
  3. Pat dry salmon fillets and coat them generously with the spice rub. Let sit for 15 minutes.
  4. In another bowl, combine Greek yogurt, lemon juice, minced herbs, salt, and pepper until smooth.
  5. Place marinated salmon skin-side down on a lined baking tray and bake for 12-15 minutes until flaky.
