- 2 cups baby spinach
- 1 cup cherry tomatoes, halved
- 1 cup heavy cream
- 3 garlic cloves, minced
- ½ cup grated Parmesan cheese
- 2 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Heat olive oil in a skillet over medium-high heat. Sear salmon skin-side down for 4-5 minutes until golden brown.
- Lower heat to medium, add minced garlic and cherry tomatoes; cook for about 3 minutes until tomatoes soften.
- Pour in heavy cream, stirring gently for about 2 minutes until slightly thickened.
- Add spinach and stir until wilted, around 1-2 minutes.
- Mix in Parmesan cheese, season with salt, pepper, and lemon juice before serving.
