Description

Creamy Tuscan Salmon is a delectable dish featuring tender salmon fillets in a rich garlic cream sauce, brightened with fresh spinach and juicy cherry tomatoes. Perfect for any occasion!


Ingredients

  • 4 salmon fillets (150g each)
  • 2 cups baby spinach
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 3 garlic cloves, minced
  • ½ cup grated Parmesan cheese
  • 2 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Sear salmon skin-side down for 4-5 minutes until golden brown.
  2. Lower heat to medium, add minced garlic and cherry tomatoes; cook for about 3 minutes until tomatoes soften.
  3. Pour in heavy cream, stirring gently for about 2 minutes until slightly thickened.
  4. Add spinach and stir until wilted, around 1-2 minutes.
  5. Mix in Parmesan cheese, season with salt, pepper, and lemon juice before serving.
