Ingredients
- 2 large orange bell peppers
- 2 large green bell peppers
- 1 lb ground turkey or beef
- 1 cup cooked rice (white or brown)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup tomato sauce
- 1 cup shredded mozzarella or cheddar cheese
- Salt and pepper to taste
- 1 tsp cumin
- 1 tsp paprika
- 2 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Slice the tops off the bell peppers and remove seeds.
- In a skillet, heat olive oil over medium heat; sauté onions and garlic until fragrant (3-4 minutes).
- Add ground meat; cook until browned. Season with salt, pepper, cumin, and paprika.
- Stir in cooked rice and tomato sauce; simmer for 5 minutes.
- Stuff each pepper with the meat mixture until overflowing.
- Place in a baking dish upright; cover with foil and bake for 25 minutes.
- Remove foil, top with cheese, and bake uncovered for an additional 10-15 minutes until cheese is bubbling.
