Instructions

  3. In another bowl, combine vegetable oil and granulated sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in red food coloring and vanilla extract.
  4. Gradually add dry ingredients to the wet mixture until just combined; avoid overmixing.
  5. Cover the dough with plastic wrap and chill in the refrigerator for at least 30 minutes.
  6. Scoop tablespoon-sized balls of dough and roll them in powdered sugar until fully coated.
  7. Place on prepared sheets about 2 inches apart and bake for 10-12 minutes until edges are set but centers remain soft.
  8. Cool slightly before transferring to wire racks.
