  • 2 cups Yukon Gold potatoes (cubed)
  • 1 cup carrots (diagonally sliced)
  • 1 cup zucchini (sliced into half-moons)
  • 3 tbsp extra virgin olive oil

  • 2 tbsp fresh rosemary (chopped)
  • 2 tbsp fresh thyme (chopped)
  • 1 tsp sea salt
  • 1/2 tsp black pepper

Instructions
