  • 4 large eggs

  • 1/4 cup fresh cilantro, chopped
  • 12 jalapeños, diced (adjust for spice)
  • Juice of 1 lime
  • Salt to taste
  • 2 tbsp olive oil (for frying)
  • Optional: Sour cream or avocado cream for topping

Instructions

  1. Prepare the salsa by combining diced tomatoes, onion, jalapeños, lime juice, and cilantro in a bowl. Set aside.
  2. In a skillet over medium-high heat, add olive oil and fry each tortilla until golden and crispy (about 2 minutes per side). Drain on paper towels.
  3. In another pan, crack the eggs over medium-low heat and cook until whites are set and yolks remain runny (approximately 3 minutes).
  4. To assemble, place each crispy tortilla on a plate, top with an egg, spoon generous salsa over it, and add sour cream or avocado cream if desired.
