Instructions
- Prepare the salsa by combining diced tomatoes, onion, jalapeños, lime juice, and cilantro in a bowl. Set aside.
- In a skillet over medium-high heat, add olive oil and fry each tortilla until golden and crispy (about 2 minutes per side). Drain on paper towels.
- In another pan, crack the eggs over medium-low heat and cook until whites are set and yolks remain runny (approximately 3 minutes).
- To assemble, place each crispy tortilla on a plate, top with an egg, spoon generous salsa over it, and add sour cream or avocado cream if desired.
