  • 1 (3 oz) package ramen noodles (unflavored)
  • 1 cup red bell pepper, chopped
  • 1 cup carrots, grated
  • 1/2 cup green onions, sliced
  • 2 cups cabbage (green or purple), thinly sliced
  • 2 tbsp toasted sesame seeds
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp rice vinegar (unseasoned)
  • 1 tbsp honey or maple syrup
  • 1 tsp sesame oil

Instructions

  1. Cook ramen noodles according to package instructions until tender but firm. Drain and rinse under cold water.
  2. While noodles are cooking, prepare the vegetables: chop bell pepper, grate carrots, slice green onions, and shred cabbage.
  3. In a small bowl, whisk together soy sauce, rice vinegar, honey (or maple syrup), and sesame oil until combined.
  4. In a large mixing bowl, toss together the cooked ramen noodles, vegetables, and dressing until well-coated.
  5. Sprinkle toasted sesame seeds on top and give it a gentle toss.
  6. For best flavor, chill in the fridge for at least 30 minutes before serving.
