Description

Celebrate Easter with this delightful Greek Easter Bunny Bread, a sweet and fluffy treat shaped like a bunny. Infused with citrus and spices, it’s perfect for sharing.


Ingredients

  • 4 cups all-purpose flour
  • 2 tsp active dry yeast
  • 2 tbsp granulated sugar
  • 1 cup warm milk
  • 3 large eggs
  • ½ cup unsalted butter, melted
  • Zest of 1 orange
  • Zest of 1 lemon
  • 1 tsp ground mastic (optional)
  • Pearl sugar for topping

Instructions

  1. In a bowl, combine warm milk, sugar, and yeast. Let it sit until foamy (about 10 minutes).
  2. In a separate bowl, whisk together flour, zests, and optional mastic.
  3. Beat eggs and melted butter together in another bowl. Combine with the yeast mixture.
  4. Gradually mix dry ingredients into wet ingredients until combined. Knead on a floured surface for 8-10 minutes until smooth.
  5. Place dough in a greased bowl, cover, and let rise until doubled (about 1 hour).
  6. Punch down the dough and divide into three equal parts. Roll into ropes and braid to form a bunny shape.
  7. Let the braided dough rise again on a baking sheet while preheating the oven to 350°F (175°C).
  8. Brush with egg wash, sprinkle pearl sugar, and bake for 25-30 minutes until golden brown.
