  • 1 head green cabbage (about 2 lbs), chopped
  • 2 medium carrots, grated or thinly sliced
  • 2 stalks celery, chopped
  • 1 large sweet onion, chopped
  • 3 cloves garlic, minced
  • 6 cups low-sodium vegetable broth
  • 1 can (14.5 oz) diced tomatoes with juice
  • 1 tsp dried thyme or 2 tsp fresh thyme
  • 2 bay leaves
  • Salt & pepper to taste
  • Juice of 1 lemon (optional)

Instructions

  1. Heat a large pot over medium heat and drizzle with olive oil. Add chopped onions, celery, and carrots; sauté until softened.
  2. Stir in minced garlic and shredded cabbage; cook for about 5 minutes until the cabbage wilts.
  3. Pour in vegetable broth and diced tomatoes; bring to a gentle boil.
  4. Add thyme, bay leaves, salt, and pepper. Simmer uncovered for approximately 30 minutes until all vegetables are tender.
  5. Remove bay leaves, squeeze lemon juice over each serving if desired, and enjoy!
