- 2 lbs chuck roast, cut into bite-sized pieces
- 1 bottle (12 oz) Guinness stout
- 4 medium carrots, chopped
- 2 yellow onions, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tsp fresh thyme (or 1 tsp dried)
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Season the beef with salt and pepper. In a large pot over medium-high heat, sear the beef until browned on all sides.
- Add onions and garlic; sauté until onions are translucent (3-4 minutes).
- Pour in Guinness stout and beef broth, scraping any browned bits from the bottom of the pot.
- Stir in carrots, thyme, and bay leaves. Bring to a boil; reduce heat to low and cover. Simmer for at least 1.5 hours until the beef is tender.
- Taste and adjust seasoning if necessary. Serve hot with crusty bread.
