Ingredients

  • Graham cracker crumbs
  • Unsalted butter
  • Granulated sugar
  • Cream cheese
  • Sour cream
  • Powdered sugar
  • Vanilla extract
  • Chocolate ganache (heavy cream and semi-sweet chocolate chips)
  • Eggs
  • Whipped topping

Instructions

  1. Preheat the oven to 350°F (175°C). Mix graham cracker crumbs, granulated sugar, and melted butter. Press into the bottom of a springform pan.
  2. Bake for 10 minutes until golden brown. Allow to cool completely.
  3. In a large bowl, beat softened cream cheese with powdered sugar until smooth. Stir in sour cream and vanilla extract.
  4. Add eggs one at a time, mixing gently. Pour mixture over cooled crust and bake for 50-60 minutes until edges are set but center jiggles slightly.
  5. Chill in the refrigerator for at least 4 hours or overnight.
  6. For ganache, heat heavy cream until simmering, then pour over chocolate chips. Stir until smooth.
  7. Once cheesecake is chilled, pour ganache over the top so it cascades down the sides.
