  • 1 sheet puff pastry (thawed)

  • 4 oz cream cheese (softened)

  • 1 tsp lemon zest
  • 1 egg (for egg wash)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a skillet, heat olive oil over medium heat and sauté baby spinach until wilted.
  3. In a bowl, mix wilted spinach with softened cream cheese, fresh dill, and lemon zest until well combined.
  4. Roll out puff pastry on a floured surface; place half of the salmon fillet down first.
  5. Spread the spinach mixture over the salmon and top with the remaining fillet.
  6. Wrap the pastry around the salmon and seal tightly; brush with egg wash.
  7. Bake for 20-25 minutes until golden brown.
