  • 1 ½ cups crushed cookies (such as Oreos)
  • ½ cup unsalted butter, melted
  • 8 oz high-quality dark chocolate (at least 70% cocoa), chopped
  • 1 cup heavy cream
  • 2 cups fresh raspberries
  • ½ cup granulated sugar
  • Powdered sugar, for garnish
  • Fresh mint leaves, for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Combine crushed cookies and melted butter in a bowl; press into a tart pan to form the crust.
  2. Bake the crust for 10 minutes until set, then allow to cool.
  3. In a saucepan over low heat, warm heavy cream until steaming (do not boil). Pour over chopped dark chocolate; let sit for 2 minutes before stirring until smooth.
  4. Gently fold half of the raspberries into the ganache mixture and spread it evenly over the cooled crust.
  5. Top with remaining ganache and chill in the refrigerator for at least 2 hours until firm.
  6. Before serving, dust with powdered sugar and garnish with fresh mint leaves.
