- 8 oz linguine pasta
- 1 lb large raw shrimp, peeled and deveined
- 1 cup heavy cream
- 2 cups fresh baby spinach
- 1 cup cherry tomatoes, halved
- 4 cloves garlic, minced
- 1/2 cup freshly grated Parmesan cheese
- 2 tbsp extra virgin olive oil
- 1 tsp Italian seasoning
- Salt & pepper to taste
Instructions
- Cook the linguine in salted boiling water until al dente (about 8–10 minutes). Reserve some pasta water before draining.
- In a large skillet over medium heat, add olive oil. Sauté shrimp seasoned with salt and pepper until pink and opaque (3–4 minutes per side).
- Add minced garlic and halved cherry tomatoes to the skillet. Sauté until fragrant and softened (about 2 minutes).
- Pour in heavy cream while stirring continuously; simmer gently until slightly thickened (3–5 minutes).
- Stir in spinach until wilted, then mix in grated Parmesan until melted.
- Toss cooked linguine into the sauce mixture, adding reserved pasta water for desired consistency. Serve warm with extra Parmesan on top.
