Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
- Add vegetable oil, eggs, and grated carrots to the dry ingredients; mix gently until combined.
- Fold in nuts if using.
- Divide batter between two greased 9-inch round pans and bake for 30-35 minutes until golden brown.
- For the frosting, beat cream cheese with brown sugar until smooth. Gradually add heavy cream until desired consistency is reached.
