Description

  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ½ cup vegetable oil
  • 3 large eggs
  • 2 cups grated carrots (about 4 medium carrots)
  • ½ cup chopped walnuts or pecans (optional)
  • 8 oz cream cheese (for frosting)
  • 1 cup brown sugar (for frosting)
  • ½ cup heavy cream (for frosting)
  • 1 tsp vanilla extract
  • ½ cup caramel sauce (store-bought or homemade)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, whisk together flour, sugar, baking powder, cinnamon, and salt.
  3. Add vegetable oil, eggs, and grated carrots to the dry ingredients; mix gently until combined.
  4. Fold in nuts if using.
  5. Divide batter between two greased 9-inch round pans and bake for 30-35 minutes until golden brown.
  6. For the frosting, beat cream cheese with brown sugar until smooth. Gradually add heavy cream until desired consistency is reached.
  7. Once cooled, layer the cakes with frosting in between and drizzle caramel sauce on top.
