  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ½ cup granulated sugar
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • ¾ cup apple cider
  • 3 large eggs (room temperature)
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs, melted butter, and sugar until crumbly. Press into the bottom of a springform pan.
  2. Bake crust for 10 minutes until lightly golden. Remove from oven.
  3. In another bowl, beat cream cheese until smooth. Add sour cream, sugar, eggs, cinnamon, nutmeg, vanilla extract, and apple cider; mix until creamy.
  4. Pour filling over baked crust and spread evenly.
  5. Bake for 50-60 minutes until edges are firm but center is slightly jiggly.
  6. Cool at room temperature before refrigerating for at least 4 hours (or overnight). Serve chilled.
