Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter (cold, diced)
  • 1/4 cup granulated sugar
  • 1/4 tsp salt
  • 68 tbsp ice water
  • 3 cups tart apples (peeled and diced)
  • 1 tsp cinnamon
  • 1 tbsp lemon juice
  • 1/4 cup brown sugar

Instructions

  1. In a large bowl, mix flour, sugar, and salt. Cut in cold butter until crumbly.
  2. Gradually add ice water until the dough forms. Divide into two discs, wrap in plastic wrap, and chill for at least 30 minutes.
  3. While the dough chills, combine diced apples with brown sugar, cinnamon, and lemon juice.
  4. Roll out one disc into 1/8-inch thickness. Cut into squares or circles.
  5. Place a spoonful of filling on one half of each dough piece. Brush edges with water, fold over to seal.
  6. Preheat oven to 375°F (190°C). Bake on parchment-lined sheets for 25-30 minutes until golden brown.
