- 12 large manicotti pasta tubes
- 2 cups whole-milk ricotta cheese
- 1 cup fresh spinach, chopped
- 1 large egg
- 1.5 cups marinara sauce
- 1 cup shredded whole-milk mozzarella cheese
- 1/2 cup freshly grated Parmesan cheese
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Cook manicotti according to package instructions until al dente. Drain and cool slightly.
- In a bowl, combine ricotta, spinach, egg, half of the mozzarella, and Italian seasoning. Mix until creamy.
- Fill each manicotti tube with the ricotta mixture using a spoon or pastry bag.
- Spread some marinara sauce on the bottom of a baking dish. Place filled manicotti in a single layer and pour remaining sauce over them.
- Top with remaining mozzarella and Parmesan cheese. Cover with foil to retain moisture while baking.
- Bake covered for 25 minutes; remove foil and bake an additional 10 minutes until bubbly and golden.
