  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 3 large eggs (room temperature)
  • 1/2 cup unsalted butter (softened)
  • Zest of 1 lemon
  • 8 oz cream cheese (softened)
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing and flouring them.
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. In another bowl, beat the softened butter and sugar until light and fluffy. Add eggs one at a time, followed by mashed bananas and vanilla extract.
  4. In a separate bowl, whisk together flour and baking powder. Gradually add to the wet mixture until just combined; avoid overmixing.
  5. Pour batter into prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  6. While cooling, prepare frosting by beating cream cheese with powdered sugar and lemon zest until creamy.
  7. Once cakes are cool, layer them on a serving plate with frosting in between layers and on top.
