  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 8 corn tortillas
  • 1/2 cup mayonnaise
  • 3 tbsp sriracha sauce
  • 2 tbsp honey
  • 2 cups shredded lettuce (romaine or green leaf)
  • 1/4 cup chopped green onions
  • Lime wedges for serving

Instructions

  1. Thaw shrimp if frozen and pat dry with paper towels.
  2. Set up a breading station with flour seasoned with salt and pepper in one bowl, beaten eggs in another, and panko breadcrumbs mixed with paprika in the last.
  3. Dip each shrimp into the flour mixture, then the egg wash, and finally coat evenly with panko breadcrumbs.
  4. Heat oil in a deep skillet over medium-high heat until shimmering (about 350°F). Fry shrimp in batches for 2-3 minutes per side until golden brown.
  5. In a bowl, whisk together mayonnaise, sriracha sauce, honey, and lime juice to make the Bang Bang Sauce.
  6. Warm corn tortillas on a skillet until pliable. Layer shredded lettuce on each tortilla, add crispy shrimp, drizzle with sauce, top with green onions, and serve with lime wedges.
