  • 8 oz cream cheese, softened
  • 1/4 cup sour cream
  • 1 cup powdered sugar, sifted
  • Zest of 1 lemon
  • 2 tbsp lemon juice (freshly squeezed)
  • 1 tsp vanilla extract
  • 1 cup white chocolate chips
  • 1/2 cup crushed graham crackers (plus extra for topping)

Instructions

  1. In a mixing bowl, combine cream cheese, sour cream, powdered sugar, lemon zest, lemon juice, and vanilla extract. Mix until smooth and fluffy.
  2. Cover the bowl and refrigerate for at least 30 minutes to firm up the mixture.
  3. Use a small cookie scoop to portion out balls of the chilled mixture onto a lined baking sheet. Roll each ball gently until smooth.
  4. Melt white chocolate chips in a microwave-safe bowl in 30-second intervals, stirring between each until fully melted.
  5. Dip each ball into the melted chocolate using a fork and let excess chocolate drip off before placing them back on the baking sheet.
  6. While still wet, sprinkle crushed graham crackers over each truffle for added crunch.
  7. Chill in the fridge for about 15 minutes until set before serving.
