  • 1 lb pork shoulder (bone-in)
  • 3 dried guajillo peppers
  • 4 cloves fresh garlic
  • 1 medium yellow onion
  • ½ cup fresh cilantro (for garnish)
  • 8 oz ramen noodles
  • 2 lime wedges (for serving)
  • ½ cup sour cream or Mexican crema (optional)

Instructions

  1. Trim excess fat from the beef and pork, cutting them into large chunks.
  2. In a dry skillet over medium heat, toast the guajillo peppers until fragrant. Add garlic and onion, cooking until softened.
  3. Blend the toasted peppers with sautéed garlic, onion, and enough water to form a smooth paste.
  4. Place meat chunks in a large pot or slow cooker; pour blended mixture over them. Add enough water or beef stock to cover.
  5. Cook on low for 6-8 hours until meats are tender.
  6. Prepare ramen noodles according to package instructions; drain well.
  7. To serve, place noodles in bowls, top with birria meat and hot broth. Garnish with cilantro and lime juice.
