  • 2 cups bell peppers, sliced
  • 1 cup broccoli florets
  • 1 cup snap peas
  • 1 lb raw shrimp, peeled and deveined (or 1 lb chicken breast, diced)
  • 2 tbsp olive oil
  • 3 tbsp low-sodium soy sauce
  • 4 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tbsp sesame seeds
  • 2 green onions, chopped

Instructions

  1. Wash and chop all vegetables into bite-sized pieces.
  2. Preheat the Blackstone griddle to medium-high heat.
  3. Drizzle olive oil over the griddle; add minced garlic and grated ginger.
  4. Add shrimp or chicken; cook undisturbed for about 3-4 minutes until golden brown.
  5. Toss in bell peppers, broccoli, and snap peas; stir frequently for about 5-7 minutes until tender-crisp.
  6. In the last minute of cooking, pour soy sauce over the mixture; toss well.
  7. Sprinkle with sesame seeds and chopped green onions before serving.
