  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 cup shredded sharp cheddar cheese
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh parsley, chopped
  • 1 cup whole milk (or plant-based milk)
  • 2 large eggs
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat oven to 375°F (190°C) and prepare a muffin tin with liners or grease.
  2. In a large bowl, whisk together flour, baking powder, salt, cheese, thyme, and parsley.
  3. In another bowl, mix melted butter, milk, and eggs until smooth.
  4. Combine wet ingredients with dry ingredients using a spatula until just mixed; avoid over-mixing.
  5. Spoon batter into muffin tin until three-quarters full.
  6. Bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
  7. Let cool in the tin for 5 minutes before transferring to wire racks.
