  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 8 oz fresh mushrooms (button or cremini)
  • 2 cups Alfredo sauce (store-bought or homemade)
  • 9 no-boil lasagna noodles
  • 3 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil or parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Cook seasoned chicken breasts in a skillet over medium heat until golden brown and cooked through. Let them rest before shredding.
  2. Sauté diced mushrooms in the same skillet for about 5-7 minutes until tender.
  3. In a large bowl, combine shredded chicken and sautéed mushrooms with half of the Alfredo sauce.
  4. In a greased baking dish, layer some remaining Alfredo sauce on the bottom, followed by noodles, then half of the chicken-mushroom mixture topped with mozzarella cheese. Repeat layers until ingredients are used up.
  5. Cover with foil and bake for 25 minutes; remove foil and bake an additional 15 minutes until bubbly and golden brown.
