  • 1 ½ cups shredded mozzarella or cheddar cheese
  • 2 tbsp olive oil

Instructions

  1. Activate the yeast: In a small bowl, combine warm water, sugar, and yeast. Let sit for 5 minutes until frothy.
  2. Prepare the dough: In a large bowl, mix flour and salt. Add the activated yeast mixture and olive oil. Stir until a shaggy dough forms.
  3. Knead the dough: Turn onto a floured surface and knead for 8-10 minutes until smooth and elastic.
  4. Let it rise: Transfer to an oiled bowl, cover with a damp cloth, and let rise for about 1 hour or until doubled in size.
  5. Sauté onions: While the dough rises, sauté sliced onions in olive oil over medium heat for about 15 minutes until caramelized.
  6. Combine filling: Mix cooled caramelized onions with shredded cheese.
  7. Shape the bread: Punch down risen dough, roll into a rectangle, spread onion-cheese mixture evenly, then roll up tightly. Place seam-side down in an oiled loaf pan to rise for another 30 minutes.
  8. Bake: Preheat oven to 375°F (190°C) and bake for 25-30 minutes until golden brown.
