- 1 cup shredded cheddar cheese
- 1 cup bell peppers, chopped
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Fresh cilantro (optional, for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat. Sauté onion and garlic until soft (3-4 minutes).
- Add ground beef or turkey; cook until browned (5-7 minutes), breaking up clumps.
- Stir in taco seasoning; mix well and cook for another 2 minutes.
- Add rice, diced tomatoes (with juice), and black beans. Pour in water or broth as per rice package instructions (about 1¾ cups).
- Bring to a boil, then reduce heat to low. Cover and simmer until rice is cooked through (15-20 minutes).
