  • 1 lb ground beef or turkey
  • 2 tbsp taco seasoning
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 can (15 oz) black beans, rinsed
  • 1 cup shredded cheddar cheese
  • 1 cup bell peppers, chopped
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Fresh cilantro (optional, for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté onion and garlic until soft (3-4 minutes).
  2. Add ground beef or turkey; cook until browned (5-7 minutes), breaking up clumps.
  3. Stir in taco seasoning; mix well and cook for another 2 minutes.
  4. Add rice, diced tomatoes (with juice), and black beans. Pour in water or broth as per rice package instructions (about 1¾ cups).
  5. Bring to a boil, then reduce heat to low. Cover and simmer until rice is cooked through (15-20 minutes).
  6. Sprinkle cheese on top; cover again until melted (3-5 minutes). Garnish with cilantro if desired.
